For best results, prepare and serve this recipe the same day.
Ingredients:
- 2 Large Eggs
- ½ cup Cottage Cheese
- 2 ounces Smoked Salmon
- Butter
- 1 to 2 Tbsp Cheddar Cheese, shredded
Procedure:
- In a small bowl, lightly beat eggs.
- Separate smoked salmon into small pieces; add salmon and cottage cheese to the eggs; mix well.
- Preheat a skillet over medium heat and coat with a thick layer of butter.
- Add egg mixture to the preheated skillet. Allow to cook until bottom is browned.
- Carefully flip egg mixture over and cook on the other side until browned.
- Using a spatula, break up egg mixture into small pieces and continue mixing and cooking for another minute or two, until all eggs are thoroughly cooked.
- Remove eggs from the skillet and allow to cool before serving. Leftovers can be refrigerated.
